The chef’s knife, also called a cook’s knife, is named so because it is a generalist as opposed to a specialist: it is suited to almost any task the gourmet chef or the home cook can think of, from mincing garlic and slicing vegetables to disjointing a whole chicken. This model is forged from a single piece of metal by Felix Solingen, a knife maker that has been using traditional methods for over two centuries. An extra long blade makes the chef’s knife exceptional at cutting meats or deboning fish, while a slim tip is ideal for chopping vegetables and other general kitchen tasks. A finger guard at the bolster provides added safety.
Made from a high carbon stainless steel, the blade is forged and tempered to precise specifications that provide a superior edge and lasting durability. The olive wood handle is carved from thousand year old trees, harvested under government supervision from protected forests in Spain. Olive wood is notable for a dense, firm structure that boasts a unique variegated wood grain pattern, making the knife attractive enough to leave out on the countertop even after the cooking is done.
Hand washing and drying is recommended to prolong the use and integrity of the knife blade.
The olive wood handles are made from a living natural material that requires little care. Every once in a while, when the color of the wood begins to look dull, rub the handles with a few drops of oil, such as flaxseed oil.
The Felix family of Solingen, a city in Germany about 20 miles east of Düsseldorf, began blacksmithing knives back in 1790 as a complement their thriving farm. In the 1800s, Karl Gustav Felix began to focus solely on the production of knives, and he officially registered his company, Felix Solingen, with the government in 1843. Felix Solingen’s knives are forged from one piece of high carbon stainless steel, a traditional method that includes over 45 separate steps and ensures cutting efficiency as well as safety.
