The Grade 420, high-carbon stainless steel wheel of this cutter features a fine edge that can slice through hearty crusts with gooey melted cheese, or a delicate sheet of fresh homemade pasta. This is thanks to the one-sided taper ground blade - some of the strongest and sharpest due to the fact that the knives are forged out of a single sheet of metal, with a smooth, gradually tapered edge as opposed to a drastic, unstable bevel.
