These humble bags of homegrown wood chips have a prestigious history. Lauded by Bill Clements, former Governor of Texas, as being a little bag of Texas itself, Larry's Bag of Smoke went on to represent the state at the World Trade Fair of London in 1988. But beyond all the bluster, Larry’s goal is simple: to help you achieve a tasty but easy grilling experience with his handy bags of smoke.
A one-man operation from start to finish, Larry harvests fallen branches and limbs from his family farm, grinds the wood, and cuts and sews the cotton muslin bags. True to his philosophy of simplicity, his favorite recipe is as follows: “Throw a steak on the grill with whatever bag of smoke flavor ya’ like.”
The bag of smoke comes stamped with its directions, and includes a handy paper tag that you can save and reference. Remove this tag and carefully pierce small holes in the front and back of the bag. Soak the bag in water for about one or two minutes. Squeeze out any excess water and put the bag in a heat-safe tray or dish and place it in the corner of the barbeque device. When the bag starts smoking, put your food on the grill and get cooking. When finished, remove the foil tray or dish and extinguish the fire. Save the bag for reuse at your next cookout.
The wood for this product originates from the 70 acres of tree orchards outside of San Antonio that Larry's family owns, with varieties including pecan, hickory, mesquite, and peach -- but no trees were harmed in the making of these bags of smoke.
About once a month, Larry goes out to the orchards and harvests the fallen limbs of the various trees. Back at his home office (his garage), he has a wood chipper and shredder that grinds the branches to a fine consistency. For the bags, Larry takes bolts of cotton muslin fabric and cuts and sews using the sewing-machine skills he learned during his Navy days. Finally, Larry stamps the bags with his logo and directions for use in food-coloring, ensuring that the entire bag is food-safe.
