Coffee beans and pre-ground hold about 50 different compounds — a bitter mix of fats, oils and acids hiding out among the delicious coffee. The task of the filter is to remove any trace of the bitter side notes, leaving a full-bodied and aromatic result.
Chemex filters are 20–30% heavier than your usual supermarket brands. Their density results in a slightly longer brewing time and full infusion of grounds, allowing the coffee to bloom. A medium to coarse grind on the beans is recommended.
The cone shape of the Chemex filter makes for perfect extraction — water filters slowly through the grounds on its way to the apex of the cone, and by the time it drips out, plain water is now delicious coffee.
The glass lid keeps the coffee warm inside the coffeemaker. It fits all sizes — the 3-, 6- and 8-cup coffeemakers.
Open the specially folded Chemex filter into a cone shape. Place the cone into the top of your coffeemaker, with this thick, three-layer portion facing toward the pouring spout.
Using regular or automatic grind coffee only, put one rounded tablespoon of coffee per 5 oz. cup into the filter cone. (If you prefer stronger coffee, use more. No matter how strong you make your coffee, the Chemex method will not produce bitterness.)
When the water is boiling, remove it from the heat until it stops boiling vigorously. It should now be at about 200ºF-- the perfect brewing temperature. Pour a small amount of water over the coffee grounds, just enough to wet them without floating. This small but important step allows "bloom" so the nuanced taste of the coffee can be released.
After this preliminary wetting of the grounds, simply pour on more water, soaking them each time, but always keeping the water level well below the top of the coffeemaker.
Once the desired amount of coffee is brewed, dispose of the spent grounds by lifting the filter out of the coffeemaker. That's it. You are now ready to enjoy the perfect cup of coffee.
When finished, you can remove filter and grounds and add them to your compost for a rich and sweet smelling addition to your garden soil.
Chemex filters for the 6- and 8-cup coffeemaker are made from unbleached paper fiber. The 3-cup filter is oxygen bleached. Both filters and coffee can be composted.
